    Did a 24 hour rub down and fridge rest before I put in pellet smoker. Put in last night at 9p. Smoker set at 200* This morning at 745 the IT was at 167* Bump heat to 275*, Need IT at 205* BBL

    If you take your SS to temp and then slice this while still in the casing, remove casing from the wafers then dehydrate and you will have SS wafer jerky.

    Did a long bulk ferment. Time to shape. 1st shape. Cover and rest for 10 mins. 2nd shape, put in basket, cover and fridge. Bake tomorrow sometime.

    I had to try this. Mixed in the KA. Didn't measure just put it together. Added some diced jalapeno. Forgot to score so the loaf blew out on the side. Still good.
