I left the fat on so the meat would be moist.
Added some butter to the top, put some foil over it and put in the cold oven while we did some errands.
Got home and butt still very hot, the fat and blade fell right out.
Pulled and the larger container went to daughters.

If you take your SS to temp and then slice this while still in the casing, remove casing from the wafers then dehydrate and you will have SS wafer jerky.
I made this couple weeks ago. Its ready to bake.
Was a little sluggish to start.
I used to start.
25g active starter
15g pickle juice
10g water
30g AP flour (thick to start)
Now for today the dill starter is ready.
Todays mix.
50g dill starter
325g water
500g AP
9g of the salt/black...
The cheese you can get at Sams.
Made 2, open bake.
Good news for me.
No new shoulder surgery, MRI and CT showed all fasteners and blocks from last surgery are intact. Yay

Didn't measure just put it together.
Added some diced jalapeno.
Forgot to score so the loaf blew out on the side.
Still good.
