Surgery #3 for 2022 is this week

Dump the drugs when they release you from the hospital. The hospital will fill you with strong opiates that are hard to get off of when you are home. I hope this is not your case, but I have personal experience with this from a very close loved one.

    Has Anyone Else Done This!?!

I am still working and wake up many days a week not knowing what day it is. This is especially the case on Saturdays. I assume this is just due to working from home and I stay up pretty late and wake up right before I have to most days. So, I wake up in a panic, trying to figure out when my...

How many minutes/pound needed to smoke two 25 LB whole pork legs??

9 hours in and the legs are in the 133F range. The color is looking great. There is nice pullback around the hock and the skin. The skin is tightening and getting kinda hard in places. But, I think they are cooking kinda fast, so I dropped the temp to 250F. The MBGS 1050 does have a fan...

How many minutes/pound needed to smoke two 25 LB whole pork legs??

I have to cook two 25 lb whole pork legs to make a traditional Cuban "lechon" for Nochebuena dinner (Christmas eve). Dinner starts at 5 PM. I have a one hour drive, so I am timing my cook to finish around 3:30/4 PM. I have been planning this cook at 35 mins per pound - 14.5 hour cook. I ran...

Perfect Dino Rips cook and then my MES died

So tallbm, The original problem (it will not power on) persists after replacing the safety switch and the control box on top (was looking for a cheap/quick fix). An Auber PID was delivered today, but I'm having doubts that it will work. What should I do next? Edit: 1. The Auber PID is a...

First Impressions: Day 1 with MBG 1050 - (long post warning -- too excited to be brief)

After my MES 30 died, I decided to do what any red-blooded man would do, upgrade the MES with a PID and add a MB Gravity 1050 to the arsenal. I cooking for a large (30 heads) Nochebuena dinner on Christmas eve (my extended family is Cuban) and Christmas breakfast on 12/25. After much forum...

Perfect Dino Rips cook and then my MES died

Quick synapsis: My perfect beef short rib cook was interrupted when my MES 30 died. What do I do? Fix it or replace it? I have had my MES 30" (? Gen - Digital with window, no Wifi or RF) for 18 months. I have done dozens of cooks with it, all have come out spectacular. My only issue was...

How do you get the internet

I use Xfinity over coax. No issues, unless Xfinity is working in the neighborhood. Living in a rual area, satellite is your only choice if wireless 5g or fiber/coax is not available. The packets have to traverse to space and back, so there will be latency. There is better compression...
