    A little bacon wrapped stuffed sweet peppers

    When i do these I use sweet peppers a lot. often times i will partially cook my bacon first about half way in the oven (13 minutes @425) and then wrap and finish in the oven as a complete pepper or on the smoker. Just makes life easier. Btw sometime try pabalano peppers that is an awesome...

    12+ hour butt smoke?

    Looks good, like said before turn the temp up to 275 and/or 350 after you wrap. if im in a hurry i hit with about 5-6 hours of smoke then in the oven wrapped for 1.5-2 hours at 350 and it comes out great! Happy Smoking, phatbac (Aaron)

    Yonder vs Horizon Smokers

    Just to throw this out there i was looking at something else at BPS and saw a Horizon 16" Ranger (the one with a vertical chamber) on clearance price $500 off ($1299) i hope that helps anyone looking for a good stick burner. if i didn't have Suzy Q i would be driving to BPS to get that one...

    If i know I'm going to reheat ribs, i smoked for the time i smoke (2-3.5 hours) and then wrap if I'm going to that day and then when i take out the foil pack or off the smoker to paint sauce on them I skip that step and i let them cool and freeze whole. then when i reheat i layer some sauce on...
