Dang. Wish I knew pork steaks were on the menu. I was driving through ofallon at dinner time. Looks great. Was in town for aunt and uncles 50th wedding anniversary. Also found some mauls for the wife, last gallon on the shelf.
Fantastic. I fried up a pound of habanero dry cured this morning and had a couple of pieces for breakfast. Daughter ate five pieces and even said she really likes it which never happens. I then had a BLT for lunch but I prefer mine on toasted rye and agree that the mater goes next to the mayo...
Looks like you are covered for the best bbq. I agree with most of the above. Dont forget to try the Hill for a large collection of authentic italian restaurants or hit up Napoli. For a good steak head to Annie Gunns.
Turned out perfect. I didnt wrap. Ended up pulling at 185. It was probing done everywhere and was 203 in most places. Was a couple places only at 185 but probed easy so I pulled it. Put in a pan and into cooler for rest for couple hours. Cut off bones and into pieces. Had scallop taters and...
More rain in forecast on Sunday so cooking the plate ribs up a day early. Planning on some lake time this afternoon so using the pellet pooper. I am early riser so got up around five this morning and trimmed the silver skin and extra fat off the meat side. Added rough ground sea salt and back...
It does exactly what you say smokinedge when cooking it. I got about 23% weight loss total. Started with little more than 10 lb belly and just under 8 lbs finished product. It does not cook like traditional bacon you cure in a bag and cold smoke but is delicious. I will definately dry brine again.
I would vote for the boathouse myself. It has more useable features such as slide out grates, nice plenum for the stack so more even temps. Neither model is reverse flow which I think makes a difference. I agree with the comment on the outlaw, paying a lot for a fancy paint job and cabinet that...
Dry brined and cured a pork belly I picked up from costco for 14 days on stainless racks. I forgot to square off the edges so they dried out too much. I cut them off after smoking. It was seasoned with white pepper, onion powder, garlic, and habanero during the 2 weeks. Next time I think I will...
You can wrap and not have fotb ribs. I like to wrap because you can infuse more flavor into the ribs that way. I cook unwrapped to IT 165 or so. Then wrap for about 45 min with whatever flavor profile i am looking for. ie brown sugar, honey, butter, fav bbq sauce. Is a sweet option a lot if...
Amazing generation. Both my grandparents fought in ww2 in infantry. Amazing both lived. My mom has a frame with memorabilia and his purple heart hanging on the wall.
Beans were Dutchs Wicked Beans. Recipe is here on this site many times. It is pretty good. I like it with peaches instead of pineapple too.
I live about a mile north of the 86 bridge near mile marker 3. Bert, with as slow as usps is these days I would have had to mail it a month ahead of...
I love mine for the most part. Only negative is you cant wrap in foil or place in a pan as it will lose signal. You have to push it through and leave end exposed which isnt ideal as you cant tell if placed correctly. No charging issues with mine yet. I am having my nephew 3D print a storage box...
Thanks for the writeup. One of many ways to cook a brisket. Glad it works for you. The turkey bag is an interesting idea. My last brisket I separated the point from the flat but left a couple of inches still attached. It worked out well and the flat and point finished at same time which is...
