    Pocket knife suggestions

    I found a knife the other day. It was from a company named Vortek. Looked them up and they have an extensive catalog mostly under $30. It wasn't very sharp but when I sharpened it I thought it was good steel. It took a nice edge. If there was a problem with it it was the weight. Heavy knife.

    Our mangos aren't ripe yet but mango with heat is one of my favorite combinations. That looks really good. I'd pound it. I like to do them in a twist. All the good stuff channels along the inside.

    Marinated tenderloin chunks in the kamado. Marinade was pineapple, apricot preserves, honey, allspice, a little heat and a touch of soy. Smoked in cherry at 260.

    Picanha Prize Here's what happened

    I fired it up around the edges and let it burn toward the middle. I started it with 4 paper towels sprayed with Pam and twisted in a rope twist around the edges of the Kamado. I added the cherry chips on the ring after it has started and put the roast in.

    Someone showed me that a long time ago after you cut up your onion sprinkle them salt then let them sit in the air for an hour or so. Dry them on a paper towel. Then fry them. The salt draws out the water in the onion. they brown well. .

    Works for me. Those look like something I'd serve with a steak. I'll probably try something similar. I have a bunch of morels. I'll try them in a small individual baking dish. Might even throw in a touch of wine along with the Parmesan. Was it Reggiano? I know you said spread.
