Thank you Brian. It was a really good meal. We also had a charcuterie board with Calabrian Lonzino, Lemon drop melon, fresh ripe figs, and marscapone cheese. Served that with a bottle of Italian Prosecco DOCG. Strawberries and homemade fresh whipped cream for dessert with the dessert wine...
Sauternes was the first wine my Uncle shared with me. It was during our big family fishing trip. I asked him what is the best way to enjoy this wine, he told me to take very small sips and let the wine evolve in the glass over time...and the flavor will change with every sip as the wine warms...
Local caught and processed lump crab meat went on sale so I decided to open a bottle of Sauternes that my Uncle had given to me before he passed away and cook a great meal. The crab was $20/#....so I pulled out a large snapper filet from the freezer for the meal. I had been wanting to make this...
4" of rain this afternoon, and we got a week of wet weather ahead of us. Same Tropical low is making a 3rd pass back out into the gulf hugging the coast so it will be a gully washer. I expect more chanterelles to flush...will be a really good soaking for sure.
Answer from Duckduckgo AI:
For 80mm hog casings, you can expect to fit approximately 1.5 to 2 pounds of meat per foot, which is roughly 680 to 910 grams. The exact amount can vary based on how tightly the casing is stuffed
One hank of 80mm casing is roughly 100-110 yards. (if it were natural and not synthetic)
One hank of 80mm casing will stuff roughly 300# of product.
So, take 105 yards x3 ft. = 315ft. of casing.
300# of product / 315 ft. of casing = 0.95#/ 1 ft. of casing.
0.95# x 454(grams in 1#) = 432grams...
@uncle eddie
Friend of mine that lives up in Oregon told me that sauteing the chanterelles in butter and onions and then freezing them is one of the best ways to preserve them if you enjoy fresh mushrooms. just thaw, reheat in the pan, and serve.....
I did this with the big batches I harvested...
Little Chanterelle mushroom I.D.......
False chanterelle on bottom; smooth Chanterelle on top ...notice the white underside on the false chanterelle and the gills have a true terminal end point on the stem. Chanterelles are not white underside.
I meant to say small emerging chanterelle buttons flushing....very small.....like 1/4"....with more time and moisture, they will grow and be ready for harvest.
Yeah, i agree...it looks like a coral mushroom, and I believe coral mushrooms are an edible mushroom but I am not familiar enough with...
I went Sunday morning and found about 1# of Chanterelle. We are between flushes here. Small button shrooms all over, need more rain for them to mature.
I did find this though....2 purple mushrooms and a golden smooth Chanterelle growing next to each other...
Geaux LSU Tigers! LOL!!!
Hell yeah Eddie!! Nice score! I figured all that rain in Kansas/Missouri would have them popping up. Two words......chanterellle alfredo. Wow is that awesome!
