    I don’t know if they are long debated topics, but the following come to mind: 1. Fat up or down when smoking a brisket. 2. Meat goes on the smoker cold or at room temp. 3. Best smoker is a....... 4. Wrap or no wrap on a brisket or butt.

    Maybe do a ring of coal around the outside perimeter, and put the meat in the middle of the racks. But i dont know what kind of temps that would get you.

    Pork spares or baby backs

    Rubs: I use Jeff’s rub, and Pitfaced regular. Not a big heat guy, so i leave the cayenne out of Jeff’s rub. I prefer BB, as they are priced similarly here. I can only find pre trimmed spares, so that drives up the price. Plus, i have turned out pretty good BB’s, and the wife likes them.

    If the brisket turns out well, i dont see what the problem is. I’d love for my briskets to get done quicker!!! Are you doing them together, trying to get them done at the same time? If this is consistently happening, just asjust your timing/planning.
