    You’ll be fine. I rub mine and rest overnight when possible. Most of your juices will come from breaking down the collagen during cooking.

    The one thing i like more about the reverse sear, is the smoke flavor i can put on them. Of course, i like no less than medium, so the gray factor isn’t a big deal for me.

    Bourbon Barrel Ribs

    Someone gave me a bag of Jack Daniels barrel chips. I used them when making steaks. Flavor was good, but most likely from the oak, and not the JD. I’ve done more with straight oak chunks, and the flavor was the same. I don’t have a sophisticated palet though.
