    Thanks. Same guy gave me a small pigs head. Boiled it and made a thick stew, kicked up with veggies and seasoning. Tasted great. Never thought of baking but can get all I want, so time to experiment.

    I fridge mine till gone. Keep it in a ziplock bag, partially opened 1/4 way to allow air in and out. Son kept bag closed and it eventually started to grow mold. Without bagging it, it seemed to loose flavor over time.

    Final result. Taste was best store bought ever had. Was good for reubens but in corned beef and cabbage, the texture would be too crumbly, unless sliced on the thicker side. Definitely would buy again.

    I'd even start 50/ 50 venison and pork. Agree beef fat is not the same as pork. Not as moist and harder than pork. Don't think amount of water would affect it much.
