    Pork of any kind, black-eyed peas and cabbage is the New years day meal.  Matter of fact I'm looking for my method to smoke this years pork (and what cut to smoke) when I came across this post.  Wonderful reading as well as wonderful stories. Happy New Year to All!!

    I fried a turkey on the Big Easy yesterday for Christmas dinner.  This is the second time I have used Slaughter House Brine and all I can say is awesome.  The bird was a just shy of 15lbs and cooked in just over two hours.  The white meat is juicy and the dark meat is well, melt in your mouth...

    I'm Sean and live in a little town just inside the North Carolina border.  I live with my wife and son in Moyock and we love smoked meats.  When I'm home I TRY to smoke something every weekend.  I'm always looking for ways to make better smoked meats.  I prefer Beef BBQ being I'm from Texas...
