IMHO - I love the taste of the Brisket (beef) so I only use a rub of salt, fresh ground black pepper and some granulated garlic. I get more of the beefs flavor using this simple rub.
I have had some other peoples Briskets that all I could taste was the rub.
Just spray it down with a little PAM - fire it up with some chips/chunks in the smoker box.
When I broke mine in I started off low temp for a hour then high temp for an hour.

Last time I went to foil ribs I found that #1 son had drained all the AJ (1/2 gal. in one take) - all I had was some peach/mango juice.........turned out great!!

The Reynolds handi-vac I have works perfect! I have never had a bad lose vacuum and I re-use my bags after cleaning. I think it is a great system. I was able to find a great deal on gallon size bags and must have 25-30 items vacuum sealed in the freezer - highly recommended.

How do you rate the KK vs the Kenmore ( aside from having to open the fron door to load wood and add water)? Is the KK larger? because that is what I am looking for.
Easy-off makes a spray especiall for bbq's - I have used on my GOSM and even my wood stove with good results.

I have had great luck with smoking the wings on low for about an hour - this just gets the smoke flavor in them.
Then the next day I fry them then toss with sauce.

I am looking at a Traeger also - the WSM is a GREAT smoker but I want the ease and set-it-and-forget-it cooks that the Traeger can provide - JMHO.
Giant Eagle - if you watch for the sales and BOGO items you can save a lot and you earn 10 cents (and sometimes 20 cents) for every $50 spent ( we buy gift cards to shop and eat elsewhere ) - I love going to get gas and getting 30 gallons and seeing 000.00 on the pump!

It's not instant read but I am not a competition cook but it's - Backlit - Accurate - has hold, set, c/f and auto off.

I get all my briskys from Wallyworld - you have a flat - full packers are always over 10 Lbs. (at least at my WM)
Numerous ways to do it but on a smaller piece of beef like what you have you can dry out very quickly. Injecting would help.
