That would be a Great addition to the SMF..We use a lot of cast iron throughout the year..Seem's there is alway's something smoking around here, If not a smoker or grill containing various meats than a camp fire with cast iron warming near by..My collection of cast iron seem's to be...

I agree with fat side up! Helps keep the meat moist and adds flavor as it breaks down durning cooking!! I always mop or spray also..Good Luck and Enjoy!!

Great to have ya in the SMF, Hope to gather some of that great cooking knowledge you have gathered in yur travels. Up here in southeastern Michigan my family sticks with the Jim Beam around the Q's..Very few dry counties up here..Catch up with ya soon...DB BBQ
