Ha Ha , I hope I don't mess up a couple of those cuts , as the TriTip is new to me and maybe the Coulotte. I will look up other members cooks on these cuts and see what I want to do with them.

2. Rump Cap
3. Coulotte Roast

I don't know why 2lb max Tri tip is largest I can get probably $10/lb. I like these different steak cuts to change it up like the Sirloin cap/Picanha/Coulotte.
Got a few Coulotte roasts recently, cooked up the first 1 last night. Smoked until 115*, then seared to 135*, let it rest about 10 minutes. Was absolutely outstanding. The next 2 i may change it up a bit, BY GETTING PICTURES....
Had the pellet proper going. Went out to put the Coulotte on and the smoker is off and the GFCI is tripped. Reset it and off we went.
Put the Coulotte on and waited. 2 minutes in and GFCI trips again. Unplugged the smoker and just left a usb security camera on and it popped again.

I always get 2 packages of coulotte (no fat cap) or picanha (with fat cap) per cow. depending on what I request.
This cow was coulotte, but the 2nd package (this one here) had 2 cuts in it. The triangular cut is what I usually get. I don't know what this other cut is, but the texture and flavor...

Had these in the freezer from one of our Home Place Pastures meat deliveries.
They marked them as Coulotte steaks, you may know them as Picanha. Dosed em up with kosher salt and CBP and let them chill in the fridge for a few hours.
