Did you actually verify your PID pit temps with a digital thermometer? PID controller may need some calibrating, it may have been running hotter than anticipated.

The fat on a ribeye is better closer to medium. And it's often a little undercooked if you order medium, which makes it about right.

If you do go the MES route , I would highly recommend the 40 model over the 30. Also look into purchasing a digital thermometer to verify cook chamber temps and meat temps.

Spread kraut in bottom of baking dish.
Brown your seasoned chops and place on top of kraut. Cover with stuffing. Prepared stove top work. Bake with thermometer probe in chops until safe temp achieved.
I normally use thick cut chops cured overnight with Morton Tenderquick.
...solution! Don't know why I never thought to check if my oven had a calibration setting. It does, and I just tested it. It only goes down to 170º but after setting the calibration to -20º a 3rd party thermometer read 150º despite the oven being set to 170º. Thanks for pointing this out Dave!

I've got a couple different therms to monitor cooks, but I rarely use them. I know, my fault. One gets complacent after 100's of cooks with no issues. That won't happen again.
I am in a similar situation. I test, adjust and balance HVAC systems and have calibrated thermometers. It is nice to know what your eyes are seeing is what the thermometer is actually reading.
