    Welcome to the forum from ND . If you do go the MES route , I would highly recommend the 40 model over the 30. Also look into purchasing a digital thermometer to verify cook chamber temps and meat temps.

    Recipe help: Pork chops and Kraut ?

    Spread kraut in bottom of baking dish. Brown your seasoned chops and place on top of kraut. Cover with stuffing. Prepared stove top work. Bake with thermometer probe in chops until safe temp achieved. I normally use thick cut chops cured overnight with Morton Tenderquick.

    I've got a couple different therms to monitor cooks, but I rarely use them. I know, my fault. One gets complacent after 100's of cooks with no issues. That won't happen again.

    I am in a similar situation. I test, adjust and balance HVAC systems and have calibrated thermometers. It is nice to know what your eyes are seeing is what the thermometer is actually reading.
