Or no sauce at all. Going for a more basic approach first, then add more down the road. If your ribs have some pull back and flexible they are done. If they fall apart then ribs are really done..can still be excellent depending on what your family likes.
If my wife wants fall off the bone baby backs I'll do 2-1-1. You may want to leave off the sauce completely. I'll usually not add anything during the wrap stage. Then sauce the last 30 min or so after unwrapping.
I agree, if all the pellets are all lighting at once they are to close to heat source. Mailbox mod would also give you cleaner smoke. Another possible suggestion would be a piece of metal to divert the smoke for even distribution. Without whatever is directly above tray will get more smoke...
If you have a Medicare Part D plan, I believe diabetes meds are capped at $2100 per year. So if that's true then starting in January on new med may make sense.

Nice work. I also watched that episode and thought it looked good. I did wonder why he did not flip the HB and let the uncooked top get a little crispy. Then pile the eggs on the crunchy part.
