Yes sir that is fantastic with that big ol smear of cream cheese. I will have to do both bagels and lox next time and Bagels with land lox(brisket). I really want to up my fish smoking game thats the only area I am weak in, because of a lack of practice.
...it's actually quite easy. You just cure it properly without making it too salty (1.5-1.6% salt should do it) and wait the proper curing time.
If you can easily cold smoke (no stale smoke), calculate/measure salt, cure, sugar, and you can wait then you can make smoked salmon lox no problem...
As mentioned there are items like cheese that can't take heat or it melts so gotta cold smoke it.
Also dishes like salmon lox and other cured and/or cold smoke fish and products.
Lots of people only do cold smoked bacon and it only gets heat or cooked when it hits the skillet.
So basically a...
Thanks! Oh it was gooood. That bacon is the only way I make it.
Mouth feel is very rich. It's very rich because of the fat with hammy/bacon flavor. I just tell everyone it's bacon cold cuts so they can mentally process it properly even though its just safe temp bacon that you can eat like...
Thanks Stu, and thanks for brainstorming the assist! Now I'm thinking lox could easily be cold-smoked on a Weber 22". I'd want the smaller 6" tube to get right on the bottom vents, and a cold morning would be needed, piece of cake
I have a Einstein's Bagel shop right across Williams Field Road...
It's not something you find available everywhere Rich, just because a place has bagels doesn't mean they'll have lox. The bagel place down the road from me can't sell lox, health department. One's no good without the other, helps a man get in touch with his inner Hebrew. Thanks for the Like bud...
Thanks Al! I fished the Pacific for 40 years in my own boat. If I'd have had this recipe back then I might have quit work and gone into the lox making business. Started out smoking salmon on a Little Chief, then a big one, gave shopping bags of fresh pink away. The ocean is the only thing I miss...
...the meats I made that were used:
Jalapeno Cure Bacon (smoked to 145F IT so it can be served like a cold cut or fried like normal bacon)
Salmon Lox (Cure#1 cold smoked, never any heat put to it)
German Bologna
Pork Frank (Cure#1 and grilled)
TX Hot Link (Cure#1, grilled, beef and pork Texas...
Wow Ray that sure beats the cream cheese/peanut butter combo I had on my store bought bagel this morning. I really need to make another batch of lox and soon. Thanks for the inspiration.
Point for sure
Chris
Some nice looking lox Ray! I always wanted to try it because I’m unsure if I would like it, but it always looks delicious. There’s a new bagel place that opened within walking of me, I might have to venture out and try it.
Ray, the lox look outstanding with that light kiss of smoke. Well done, amigo!
Congrats on catching the well deserved ride too.
Stu
P.S. Einstien's have the best bagels in the valley and I sure do miss them. The closest shop to me now is over 30 miles away.
...us some steelhead that was smoked and for the life of me i couldn’t understand how they did it because it was cold smoked but it was drier than lox at the store that you buy in the gold packets at the grocery store…. So I don’t have a curing chamber …. In your opinion would a week in the...
Looks fantastic Ray! It’s been a long long time since I’ve had lox. Way back when I was young I spent some time in Hallendale FL. There was a nice deli across from the Gulfstream Racetrack that had the best. Loved that place. Also had killer liver pâté and pickled tongue.
Thanks Steve! I've got a Einstein's Bagel shop a quarter mile from my house and this stuff freezes well, make the occasional treat for Jan easy, and she loves the stuff. Thanks for the Like Steve, appreciate it, RAY
Thanks Jeff! I'm thinking lox may be a bit more prevalent near the coast as opposed to middle America, that's where the fish come from after all. I don't do liver in any manner, shape, or form. Yesterday happened to be my lifelong hunting partners birthday, he emailed to tell me he went out for...
