My BigChief (BC) will probably get a new heating unit later this year thanks to your threads. I'm mostly thinking forward to when I do my Westinghouse fridge smoker build.
I've read a lot of threads that have differing observations on exhaust placement. So far top center appears to be a...
Thanks for the follow-up. So it sounds like the SV picks up the slack based on the outside temp and smoker temp on any particular day. In my case, the BigChief has an infinite temperature control based on the amount of dimensional lumber I have on hand, and if I'm in the shade...
YAY! I get to join the Enabler Club (well, maybe more of an influencer, but hey! :emoji_stuck_out_tongue_winking_eye:).
I wish I could find someone who wanted to make a smoker out of an old upright freezer so I wouldn't have to cart it off to the dump!
Who me? 😇
Go away for a few hours and already 2 items on the wish list?
Yeah, yeah, yeah, they've been on the wish list for a long time so it doesn't count against your resolution?
I'm deciding what to do with my BigChief.
I paid $25 for a once used smoker. I have smoked a lot of meat and...
Wow! thank you third eye. You gave a lot of good information for me to explore as I try to develop my own signature taste. Glad to see that the chief box smokers still have a role in smoking for even the master smokers. I actually love using mine, but mostly see threads with the larger, more...
Not really sure what you mean by sheathing. I just transferred everything over to my BigChief where necessary. With all the wiring under the floor of the smoker, I did nothing extra to protect the wiring.
SherryT, You're already mentally tearing apart a new MES40 before you get it and more importantly before it craps out on ya?
I would at least run a new smoker as is and then if and when it dies.....get out the surgical Auber gloves.
Getting the Auber WS-1510 for your bigchief is a great way...
Thanks Robert . I did a big batch of fresh sausage a couple weeks ago , but seeing all the sticks and spam posted I had to make something .
Thanks Lynn . Last time I heard that I ended up with 2 kids and a big house payment . Certainly appreciate the comment .
I was wondering today if you got...
Like said in post 3 you need to know the wattage . In this case if you're using a hot plate you would need to check the wattage of the hot plate .
I believe the wattage of the 1211H is 1200 .
Just keep in mind that if you at some point upgrade to another electric smoker , it may or may not be...
Nothing wrong with the BigChief. That was my first smoker and I won a BBQ competition with it and a Webber grill. I know there are a number of techniques and methods for brining and as long as you keep safety in mind, they all work well enough.
When doing any brining, I determine how...
I smoke for 3-4 hrs using Pecan dust. I'm looking for an old BigChiefsmoker that I can use for cold smoking. Here's a blast from the past with a lot of info.
Mr T's Smoked Cheese
I have two , a single prob ( for cabinet temperature) and a double prob ( one for cabinet temperature and the other of food temperature). The only thing to watch for is not to exceed the amperage draw. I did on my home made smoker and had to replace a internal buss fuse. I love it. I use a 120...
I have never used the flap or baffle. Being the exhaust pipe, it remains fully open (vertical). The reason I installed the pipe was because the propane smoker did not have a vent on the top which I wanted. It's stock vent is on the back panel towards the top. Also, since I run my temp probe...
I put them in a paper lunch bag and in the fridge overnight, then vac'd the next day.
I do have a propane smoker, but I use it for butts, ribs, etc (larger cuts of meat). I now use my BigChief for cold smokes (tube/tray only) and for more "controlled" smokes (if that makes sense) since I did...
I'm not for or against the idea since I have bought a lot of new stuff over the years with the sole intention to immediately modify it to suit my needs.
I put off getting an Auber for a LONG time (same model as chopsaw's above), but now that I have it, I wish I'd gotten it sooner.
Works great in my hacked BigChiefsmoker!
All really depends on the season and ambient temps, winter being easier than summer in my smokehouse. I generally start at 120F with smoke then gradually let it climb to no more than 140F, in winter I can get 4-5 hours of smoke but summer it’s usually a fight over 2 hours just because the temp...
Hi @Hapagrrrl and welcome aboard. I started with a Little Chief too! About 45+years ago :emoji_astonished: , then got a BigChief. They now are mostly used for smoking fish and flavor smoking things like ham shanks and such. But they are cool units, and even though you will likely move into...
Update on your 3rd attempt? If it failed again, I would get the auber as planned and as what I did, I over rode my Masterbuilt's entire circuitry by attaching a power cord directly to the heating element, then plug the power cord to the Auber.
Just like plugging a Big or Little Chiefsmoker...
