Smoke ring not as evident after 9 hours smoking. Started at 180 plus added 12” tube with pellet/chips mix. After two hours raised to 275. Last two hours at 300.

Try a smaller charcoal load and a tube filled with pellets. You are looking to smoke and partially cook the sausage before finishing by poaching in a warm water bath.
I can smoke in a JJ using a pellettube and a small charcoal load. Wood chunks are not reliable in my experience.
I purchased a recteq dual fire. I thought it was one of the more versatile units that I was researching. Looked hard at camp chef as well but the recteq just seemed to do more of what I want to do.

Temp is good, skip the smoke mode. I find it a waste of time.
Smoke to an IT of 145 minimum then let it rest for 15 min.
Pellet is no different than any other cooking, just an easy way to do it.

I'm team RecTeq all the way. There are a wide variety depending on budget and their customer service is the best I've ever seen. If you are concerned about smoke, you can amazon a smoke tube for $10 that will add smoke and most smokers have a low heavy smoke setting.

I’ve never used a pellettube, do they put off a lot of extra heat or is it just mainly smoke? Everything works on this smoker, being a little older and not having any money invested into, i wouldn’t mind upgrading it, any suggestions on what I should change out?

I found pitboss pellets to be almost smokeless, pellets don't give off gobs of smoke at the best of times, but those were zero smoke. Good heat but defeats the purpose.
