My AMPS. I bought one of the original ones from Todd (Anderson?) back in the day. When coupled with my mailboxmod, it's probably the tool I used the most by far. Sadly, I sold it along with my MES 40, when I got divorced and had to move to an apt.
Did a test with whole pellets and dust in a tube with my mailboxmod.
These burned well as whole pellets but not so well as dust,the dust just wouldn't stay lit.
So I ended up smoking a ribeye using whole pellets and then a quick reverse sear.Plenty of charcoal flavor in the finished product.
2 rounds of microwave and the 10 min good flame up solved everything for me. Also getting good airflow holes nailed in mailboxmod. Takes a little work to sort out but once u get it sorted it is consistent.
I've only used the LJ char/hickory blend and it does give your food a charcoal flavor.
I've never used 100% charcoal pellets but that'll be happening tonight if the snow stops.
Need to break-in a new mailboxmod as the old one has seen better days.

Mine doesnt require much baby sitting runs pretty close to set temp. Using the mailboxmod with the amnps tray I get 9-10 hours of continuous smoke, also another reason you'll need the pellet tray most mes smokers would burn chips under 200-210.

Mailboxmod is the best for electric.
Can remove or open chip tube, make sure pellets, chips are dry. The trays do not burn inside as well as the tubes. I used 6" tubes in mine for 2 hrs of additional smoke until did the mailboxmod.
Do what most have already done. Get an third party PID (ex auber controller) and do the mailboxmod. Temps will be steady and you won't have to feed the beast every 20 min. And Yes, you'll get good eats!
I think what you want is a Masterbuilt electric MES 40 for what you want to do. It can be modded with a PID for temp control and the mailboxmod for smoke.
Realistically if you could find a used 40" Masterbuilt Electric Smoker(MES) do the simple rewire and add an Auber PID you'd have a better smoker at a fraction of the cost.Doing the "mailbox mod" makes it even better.It just might not be as pretty though!
My MES-30 went about 7 years also, but decided to die on Thanksgiving when I had 2 turkey breasts to smoke. Black Friday is coming, check out the ads. There will likely be some MES-40's on good sales, that's what I did. Enjoyed the extra room and used a mailboxmod to make it even more set-n-forget.
