Yeah @normanaj is completely correct!
The PID would be cutting power Off to the entire MES. That means no power to the controller and heating element so it is effectively unplugging the MES.
Then when it turns power back on, I believe the MES is no longer set to be "on"...
I have found that with my pellet smoker opening it doesn't really add much time, the burner kicks on and back to temp in nothing flat, that's not how wood burners work as it can't ramp up or down easily or quickly. It's rare I wrap as it's tough to build smoke flavor without spritzing or a tube...
I've got an a-maze-n tube that I use to supplement smoke in my pellet cooker. But it is far too small for this cooker. I can easily fit a 100 lb. whole hog split on this cooker, so it's a large chamber.
Hey just a thought but duck thighs and legs are made for slow cooking…. Ie I think a tin pan with some duck layered out then 225 till it is fall off the bone….a smoked version/variation of confit. That would be perfect for salads and pasta dishes

I agree, before I got a smoker I tried a little cast iron "smoke box" and foil pouches etc. They just dont work all that good IMO. I dont think soaking wood chips really does much. You want smoke, so wet wood doesnt get you there.

If you do Sam's club, the members mark smoker is either manufactured or licensed by camp chef, and uses an additional smoke box for "more" smoke flavor. Haven't used it but supposed to be good.
