People get confused Ron. Yes, there IS a difference. While salt <sodium chloride> can be called a "cure" and used as such, it's no where near as effective as sodium nitrate.
I have cured a few birds. One word of caution wheather curing or brining: Reduce salt OR cure by about half, as the...
Hey Scott, nice to have you here. Bring on some of that smokedpheasant and wild turkey. I have never got the knack of doing birds. It is great to have another Kansan hear, even though your out there in Wildcat territory. If you ever get over here to McLouth your welcome to stop by. Heck...
Marty welcome to SMF. Look forward to reading your posts and seeing some q-view of your successes.
I've always found fruit woods to be better for wild birds tho I've never smoked a pheasant. Let us know how your smoke turns out.

It's not my intention to disagree with you on a personal level What I have to go off of his experience working in a commercial meat locker where one of my jobs was curing meat products. A well as the science. I wrote Kansas State University meat science dept and recieved a reply from...
Had a great turn out yesterday, and alot of food. Smoked deer roasts, grilled deer steaks, MD buck balls, and tuna. Smoked and grilled pheasant. Two pots of chili, and baked beans. also oysters. Homemade chocolate pretzels for dessert. This was the first year I did this, but plan on making it an...
I suppose then the standard cure amount would be applicable. I have only brined whole birds. Yeah, there's not much else on 'em, but smokedpheasant under glass looks SOOO much better when it looks like one...heh.
thanks - i've checked that. found very little in the way of pheasant technique - though i am heartened by Sasquatch's enthusiam for smokedpheasant! :-) I don't think my electric smoker will get up to the temps suggested in what i found, and so i expect i still need to bring temp up to "done" in...
Greetings from Morgantown, WV, home of the "choking" Mountaineers. Been reading the forum and getting ideas for a while from y'all. I've been smoking meat for about 3 years now. Have a low-end brinkman electric water smoker, does the job but have problems with temperature control (mainly because...
I have smoked alot of turkeys, friends and family love them, but I have yet to smoke a wild turkey. There is a wild turkey where I pheasant hunt that thinks it is a pheasant. It hangs around a follows the pheasants everyday, basicly lives with them. I am thinking he may just end up in my...

Soon you'll be smoking and serving up such delightful fare as smoked duck and smokedpheasant...perhaps with a side of wild rice and mushroom dressing!

well the job took longer than i had anticipated (as i said before, had to rewire a socket in the garage, etc!) but it all worked out!
what i did - reduced to my ultimate newbie level--
used two pheasants, no skin, quartered (8 pieces)
1/ thaw : took pheasants out of freezer day before...
Hello folks,
My name is Greg, and I live in NW Iowa. I just purchased a Masterbuilt Electric Smoker today, along with some Bradley bisquettes and a Bradley cookbook.
I've never smoked anything before, so I'm here to learn. You all have a wonderful site here.
I have a beautiful wife, two...
When I lived in Iowa, my hunting party would save all the pheasant giblets and we'd all get together in the spring and fry em up. We'd have like 50 lbs of it. I wonder what gizzards and hearts would taste like smoked.
Welcome aboard Rik. I smokedpheasant the 1st time out (along with ribs) and the pheasant came out real nice. Never had pheasant taste that good ever.

SmokedPheasant? I came from pheasant country, and I've never smoked one. I just can't imagine it any other way than oven baked with wild rice stuffing. Sorry I can't help. I'd say you better brine it though as pheasant has a tendency to dry out fast.
..so I must be in the right place!
Hiyas, newbie smoker with new equipment and lots of game seeks knowledgeable gurus for info on making delectable eats.
After many years of going to the freezer and asking the question: "How am I gonna cook this?", I have decided to broaden my culinary...
I have not smoked much for meals for others outside of our home. Just grilling pheasant appetizers and kabobs; which they are having problems duplicating (hehe), after giving them the recipes.
But I am having a serious problem the last 3 or 4 years of acquaintances asking me to process and...
I'm w/Buzzy, dove is awsome. I also like pheasantsmoked the same way. I don't see how you guys can eat rabbit. Had some hunters one year keep jack rabbits(didn't see many pheasants). He would crock pot them, pull the meat off the bone and mix in with bbq sauce and use for sammies or as a...
