In 2008 I found a cheap offset smoker at Home Depot and bought it on a whim. Played around and got results, would not call them great but they were results. Did some internet searching and found The Smoke Ring and was semi active on there for awhile. Good folks and helpful but over the years...
Could a outdoor kitchen build be added to the forum page? I have been cooking on the car port slab and would love to have a outdoor kitchen area. Its hard to find info on the internet because it is so spread out. Pinterest has nice pictures of kitchens but no one to talk about pros and cons. I...
Hi everyone I figured I'd share my smoker build. I did not buy or find any plans I just drew it up on paper and looked at other builds online to come up with something that would work for me.
Yes it is over built I like doing that. No it wasn't cheap but it will last for a life time.
4'x4'x3'...
We are starting a BBQ club and eventually a competition team at the High School I teach at. I would like to add a camera where the students can check in on the smoke inbetween classes, free time or so I could time laps the process for teaching. We will be starting with drum smokers for each...
KJ, since you working with the builder to find a solution and it sounds like he is willing to work with you, hopefully, you will find the answer/solution you are searching for.
The only parting words I will share are that the principles of thermodynamics are very applicable in a smoker and the...
Good morning all!
I am new to posting on this site but spend a lot of time browsing and reading. Great information in this brotherhood of meat smoking.
I am in the process of building a large smokehouse. It will be sitting on an insulated concrete slab. I am going back and forth about a stick...
Welcome! This is a great place to lean and be inspired......I would not have the BBQ/smoking experience without the forum. It inspired many builds in our house.....and since you mentioned sketch up, here is a build my son and me did.....sketch up worked sweet and that’s saying something cause...

Hi, I've been looking into building a smoker for the first time and came across the tutorial here. I'm planning to use a 250 gal tank that's been cut in half (43" long) for the CC and a 15" long section of a 250 tank as the FB.
Did the calculations from the tutorial and got the following...
I never met Gary. Never met any of you in person, but I have my favorites, as I'm sure we all do. When I was looking to build an rf patio smoker, I followed Gary's builds, always checking to see what he was up to, as he seemed to always be starting something new or tweaking an old build. Long...
or Eastern North Carolina....but Western Atlantic sounded more fun. Either way, I am a very good home cook with mostly savory, indoor or gas grill experience. Recently bought a new place and want to build an outdoor kitchen that includes more smoking and bbq style rather than gas. I am working...
silica = sand.....
the materials to manufacture hardi board are inert. I looked at this when I built mine. I went an extra step and also lined the inside with aluminum flashing for a good seal. Not necessary as once the patina builds up, it will seal the pores in the hardi board.
Good evening everyone,
My name is Jeremy. I hail from the great city of Colby (the home of Colby cheese!) in central WI.
I have been grilling for about 25 years and smoking for about 15. I have built my own rolling cooker, and am currently rebuilding/converting a Smoke Hollow 44 into a...
Hello everyone! Ive been a deer hunter my entire life. Ive grown quite fond of venison sausage. This summer I bought all the necessary equipment to make snack sticks. I made my first 18lb batch over 100’ of 19mm collagen casing and quickly found out I didn’t have near the space needed to cook...
I think they will all be fine for you, actually.
My new Weber SmokeFire impresses me after only two roast sessions in 50° F New England spring weather. For you, you might like the shiny enamel paint that's nice and thick. You will still nick it - I did when I installed the shelves - but you...
Thanks civilsmoker. In addition to testing by building a fire directly on the fire bricks, the other thing I want to test is what you mentioned about using regular briquets to start my fire, with just one chimney. Now that I think of it I have never tried briquets in this smoker. I used to use...
Bottom of my offset smoker is 20" below the bottom shelf, with a drain below smoke stack which drains into a 5 gallon bucket. Below the doors is a trough that catches condensation from inside of doors and drains to the rear. I don't use any water, etc inside the smoker, a lot of condensation...
Hi there and welcome James!
It sounds like you have 1 really good option that may be a little scary but isn't. Or you buy a new smoker.
The 1 really good option is to do a simple rewire and to use what is called a PID Controller to run your smoker.
The rewire is simply cutting the ends off 4...
