UDS stands for UglyDrumSmoker but lets be realistic most of the barrel smokers are not ugly.

The design above will definitely work. The best part of a UDS (UglyDrumSmoker) is you can build it to fit your needs. There are a lot of build threads on the UDS board here that will give you plenty of ideas.
Honestly, if you are looking at minimal supervision, a stick burner is not the way to go. You'd be better off building or buying an UglyDrumSmoker (UDS) or 2. Your other option for minimal supervision would be any number of cabinet style smokers from several different manufacturers...
you can check out the forums at smokerbuilder.com too for ideas. It seems like a really popular, cheap alternative is an "ugly drumsmoker". With some scrounging you could probably build one of those pretty simply/cheaply and have two 22" round grates to smoke on. Or find a cheap/free side...

i made a UglyDrumSmoker (UDS) here in Dumaguete..Cooks baby back ribs and taste great. Taste Great. Better the so called "Texax Style BBQ" meat here in Dumaguete.
I normally cook about 3-4kilos at a time with the UDS.
