Before anyone else asks, the theme is chicken. Any breed of chicken is fine, cornish game hens are fine because they are just small chickens. But no duck, quail, pheasant, turkey, squab,dove, partridge, peacock, flamingo, eagle, rhino etc.....

I see no reason you should not be competitive with cornish game hens Bob. I just finished watching a competiton on the Food Network. Seemed the thing most talked about on the chicken entry was the skin. You do not want the skin to come sliding off in the first bite.

Welcome to the forum Nick, glad to have you aboard. Pheasant can dry out. It benefits from a brine, marinade or even bacon added on top. Smoked sausage under the skin is also a nice way to add moisture. (in my opinion )

The netting is fine. Butchers use it to keep the roast together. Have you ever seen smoked duck, pheasant, etc. They usually come smoked with the netting on, or removed just after the smoke and you can see the netting pattern on the meat.

I cure mine, in a curing brine with onion, rosemary, celery and black pepper. then a bacon grease rub... Then a low and slow smoke till a nice golden color. Oven finish wrapped in foil till tender. mmmm!
Going to smoke some Pheasant my son and I got around Christmas (his first time out) and I am thinking about Ribs since I have never smoked Ribs before.
Also I will go through the freezer and see what else i can find.
...so.. i want cold snack pheasant.. not aiming for hot roasted pheasant for dinner, and not going too gourmand.. want to find what the "smoked pheasant" tastes like, not smoked "pheasant in a brie and pineapple soy chutney" or some other exotic taste treat.
