Sorry so late but Family started arriving. The wife had a butt end ham in the freezer, so what better than prepare a double-smokedham for Christmas. (RIP John, Bearcarver)
I made up a simple glaze, brown sugar, mustard, worcestershire, pineapple, cinnamon, ground clove, orange zest...
Wife had gotten two hams not long ago and decided it was time to double smoke them, ala Bearcarver (RIP) method. Not so much to eat right away but more so to break down into smaller pieces. Had to get out the bathroom scale to weigh them as none of my other scales could handle the weight... 18...
I know you like low carb dishes too. Give these a try if you like potato soups. https://www.smokingmeatforums.com/threads/loaded-faked-potato-soup.291883/ https://www.smokingmeatforums.com/threads/double-smoked-pulled-ham-fauxtato-chowder.312513/
What are yours?
For us, it's 2 turkeys...1 16+lber brined, injected, and smoked. The other, an 18lber., injected and fried. Also a doublesmokedham along with about any side dish you can imagine. My mission, should I choose to accept it, is the turkeys and the sweet potato casseroles. Most...
...on the volume of butter & honey and size of your ham). I glaze for about the last 15-30 min. of the smoke. Works great on the doublesmokedhams, and the spiral sliced ones also. The alcohol evaporates off but the flavor remains and blends very well with butter and honey especially once the...
Congrats on the feature spinner, Ryan.
Missed this thread.
I love doublesmokedham. Wife does NOT.
I don't mind driving in blizzard conditions. Wife does NOT.
I don't consider it bad until you have to drive with the door open to try and find the center line. Worse is when there is snow...
Thank you! My wife wasn't a fan of the weather by any means! And yes, I have driven in a white out holding driver's door open watching the yellow line... as it's the only thing I could see! Hope to never have to again!
But gosh dang that ham is good!
Ryan
Sounds delicious. Us it's a bone in 18lb ham a 12lb turkey out of Pop's brine will be put on the rotisserie, giblet dressing and all the fixens tomorrow with daughters and a house full of grandkids, I'm looking forward to it. Snowstorm starting tomorrow night with a forecasted 5-10 inches of...
I like bone in hams - personally - but boneless is a fine 2nd choice.
I just put my ham in the smoker and warm it up to 140F while adding more smoke...and end up with a double-smokedham. The smoke that you get from the grocery store is pretty weak.
The double-smokedham salad is the best...
16lb turkey in a bag/oven. no brine because the live in sodium water in that bag. custon dry rub after a slathering of compound butter. stove top stuffing (outside the bird.) green bean casserole , mashed taters, my own special gravy from broth of giblets/neck. home made pimento cheese and...
Thanks Timbo!
Thanks JL, I smoked this cut side down @ 235 for 3 hours till the INT was about 110….then foil covered it for 45-50 mins till it was INT 135….. then transferred it to the house oven to hit it with a low broil setting on a lower shelf level…..at the point I turned it on its side...
...to a minimum due to discomfort.
Today's smoke list is a single full rack of baby back ribs, and a bone in shank portion of ham (doublesmokedham - NOT pre-sliced). Both rubbed with SPOG with butter powder added, and some good old Meat Church The Gospel. I'm trying to stay low carb and may...
I based this off Jeff's, Ham Chowder. I used the juice from 3 small cans of minced clams for broth. There was about 1 and 3/4 cups juice in those. Not much clam. This is better than the classic! Used some Old Bay in the onion and cayenne in the soup . Ate 2 bowls and could of had another...
...it was sell by today. (K-roger is the Kroger, if you don't spell it that way on Facebook you get a bunch of Kroger adds in your feed and on your phone, so now its a habit) Vac packed so it should be fine for one more day. That's more of a proper first smoke than a doublesmokedham. Woo Hoo!!!
I've smoked prime rib & Turkeys over the years and everyone loved them but I decided to stick with what I know and this year was BBQ!
Prime whole packer with a couple of select points. Just used course kosher salt & black pepper on the Prime whole packer and added a layer of Heath Riles Beef...
