    Thanks for the advice! That's kind of what I'm learning about the babysitting part, but I'm a fan of wood/charcoal over gas/electric so I'm happy with the beers and tunes! Good to know about the temp, that's definitely a help as 225 just seems too low to make anything work.

    I accidentally left out overnight a rack of ribs wrapped in tinfoil on the kitchen counter after I applied a dry rub. Kitchen temp is about 64 degrees. I plan/had planned to smoke the ribs for myself (not feeding them to a bunch of people). I'm sure there's varying answers, the safest of course...
