I have the Henckels poultry shears.Not the best made but for the price they are outstanding.Many chickensspatchcocked and many a wing clipped with these.
This is different than traditional spatchcocked. It opens in the opposite direction and saves the oysters, the spine is not removed. See Al Frugoni's YouTube video on it. He opens up chickens 3 different ways, Spatchcock, frog style, and a third way with a long Argentinian name.

I think it works both ways depends if you are wanting more smoke flavor or grilled flavor. I did 275 best chickens we have had but I had never dry brined or spatchcocked them. I put a the breast toward the fire and put a log in front to protect it and it was great.

i never really considered pellet smokers as not sure how many chickens I can do at once, they have a single layer only and I think maybe only 4 x chickensspatchcocked. However if the chickens are whole I could fit more. I will look into it. thanks for the suggestion
Definitely look around, a number of pellet smokers come with two shelves. Obviously depending on unit size, a 2 shelver could support 4 spatched on each shelf.
I have a Rec Tec RT-700 and with the package I bought when purchased, it came with a large removable second shelf which would probably hold the other 4 birds you need done. I use the second shelf when smoking bacon and it's really handy.
