I'd probably just bypass the dial with a wire nut being two wires if you're getting a plug and play Auber. Unplug the smoker from the Auber and bring the PID inside out of the humidity when not in use.
Oh yeah they are awesome as a power switch like that. The one I listed is 110/120V so for smaller voltage there might be a better fit out there. Just don't get one that will melt on you lol.

Sounds like you are on it checking the heating element already. I've had where the connectors were ok BUT corrosion built up between the wire and the connector itself at the heating element. That's a quick fix replacing the connector.

That PID "kit" seems fine but it is not a complete PID controller.
You would have to still get a good number of components, a enclosure, and do a little fabricating on the enclosure to make everything install and fit together to make a complete controller.
