I have a Yoder YS640 that turns 10 years old next month. Body is holding up well; but I do have maintenance with sandpaper and hi-temp paint (but it is very repairable/serviceable). I have replaced the temp probe twice. It has been covered when not in use.

That's good to know. I use trays for cold smoking but absolutely can not get one to stay lit while my Yoder is running. Gonna get one and try that.

Welcome home, read to many posts of Yoder rust, Mac in the size you like imo, been using a pitboss got 5-6 years and being able to sleep at night is great lol.
I think gold standard answer on pellet grill / smoker is either a Recteq or Yoder if budget allows. Lower cost I would look at Pit Boss. Before you settle in on pellet I'd also strongly consider a Masterbuilt Gravity Feeds. Convenience of set and forget temp with the fuel source being a chute...
A method I use for smoking in my Yoder YS640 pellet grill is.
-4 hours unwrapped over a water pan at 180
-3 hours unwrapped over a water pan at 300 with smoke tube
-4 hours foil boated over water pan at 300
-2 (+) wrapped in foil resting in 150 food warmer

I honestly think the best solution for you is a good pellet grill. You get the convenience of a gas grill with smoke from the pellets. A quality pellet grill like Yoder or Rec Teq give a fair amount of smoke flavor without adding a smoke tube. You can always add one for more.

I usually do a spring clean of all my cookers, and will probably do it in the next week or two. A couple hours ago I almost started with my Yoder being first. Got out in the garage and changed my mind in about 5 minutes.
