Looks a win to me. Never tried a foil boat method...I have always done fat side down till probe tender than cover and stick in a turned off oven for a couple hours.

Hey Dan, I just ordered some Ancho Espresso rub from Lanes. Gonna give that a rip. Also order their Hot Honey...Hoping it has some heat. I like the Meat Church hot honey, but the heat cooks out pretty good.
