I cannot tell for sure if your Novus is but Auber is legit PID and programmable. Set it for a sausage ramp you set and it runs how you want within a tight spec. Will also run as high as you set it. 325F for ribs etc no issue for the Tex from memory.
Last run was some cured dark meat turkey.

As with any system there will be the tuning and learning and a rewired MES is not an exception to that rule.
I think once you get your probes all sorted out you will good to go.

Don't have a MES, but what I read over and over on the forum the wiring is a big failure in the connectors and a cheap over temp sensor.
Sorry I cannot withstand 40 minutes of video for 5 minutes of actual content but his theme to use a PID control is what you really need for precise temperature...

You cant run the novus in conjunction with the Auber. What I did was remove all the original electric (Take pics before you remove all the wires) then I wired the element to a HD extension cord which plugs into the back of the Auber. Use the Auber temp probe to operate the PID.
