Mostly an amnps. But do have a 3 burner cast iron propane burner inside for some heat if needed. Don't really use the fire box on the back anymore. Two bearings on rear axel and long angle irons are only thing that cost me anything.
Thanks , I appreciate it! It's an older post but Peachey had...
Not sure about your smoker set-up (I use an MES40), but when I need PP for lunch, I usually start it at 10 PM (+/-) and use my AMNPS for an overnight smoke. If it gets done a little early, just rest it in a cooler.
If I cooked it ahead of time. I would shred-it, fridge-it and warm it in a...
Here’s my mailbox mod with a Auber PID controller on top. I added a few holes in the mailbox so the AMNPS has no problem staying lit. You can see that the mailbox is elevated slightly for good air flow thru the holes in the mailbox bottom.
For my current newish MES40 (about a year old) I moved my AMNPS away from the chip tube hole to the far side on the bottom deck of the smoker. I also use an aluminum drip pan on the bottom grate to catch any drippings.
Hi there and welcome!
I don't have a line on either but I can pretty much promise you that the AMNPS tray will not stay lit inside your MES30.
I've helped a number of guys with MES30's and this problem and they all had to go to a mailbox mod.
Now the MES40 has some guys that have had success...
What brand of pellets did you use? When I had a pellet grill I would use my AMNPS to get more flavor along with Lumberjack pellets. I found that gave the most smoke flavor. Also for longer cooks start at lower temps. Like 200* for an hour or so to generate more smoke.
Could be wrong bit I think the low setting is 100 degrees. These are great for smoked cheese, just ad a mailbox mod with a amnps tray. Also as mentioned good for smoked sausages, bacon.
...so the heating element doesn't cause it to get too hot and ignite the pellets.
Like others have mentioned I run the A-Maze-N Pellet Smoker (AMNPS) tray, not the tube. The tray will produce up to 12 hours of smoke but doesn't always work when set inside the smoker so I use a homemade...
...but judging from the pics on their site, there's no practical way to hook up a mailbox mod without cutting a hoke into the chip tray drawer. So...using an AMNPS would require putting it inside the smoker. Success would then depend on the amount of fresh air accessing the cook chamber.

...of smoker do you have? Is it a MES or some other brand? Does it have an external chip loader?
Some people have good success with putting the AMNPS pellet tray inside the MES but I was never able to keep mine lit that way--just not enough air flow into the smoker. If you have the chip...
...much smaller summer sausage casing I had on hand and worked well for the left over meat
Smoked 3 hours with 2 rows of 100% maple pellets in the AMNPS and MES set to 130F degrees just to add smoke to it all
SV bath at 148F for 6.5 hours, I pulled the summer sausage casing at 3.5 hours since it...
