    Beginning to hate my MES40

...turns off, but many times it doesn't give the fresh chips time to ignite. So it sits with no smoke until I check it. (Yes I know I can use my AMNPS, but what's the sense of having a chip tray?). The stupid display is almost unreadable. The 7 segment display is down to about 4 segments each...

But are you still considering using the Masterbuilt cold smoker but with a longer exhaust vent tube? Per tallbm's replies, so much easier and most importantly cooler using a mailbox setup with a AMNPS tray.

Mailbox mod vs. Amaze-N in smoker

Airflow for an AMNPS inside an MES can be iffy but in an mailbox mod you can tweak until you get it right. (Often this is the only option that will work with an MES30). Also you never have to open the smoker to jack around with the pellets should there be a pellet flare up. If you have mailbox...

    Cheese Smoking question...

...size of the smoking vessel and what you use, pellets vs. dust is a factor. Which is a double wide commercial fridge with apple pellets in amnps for usually 4 hours. Better view of size... Now that amnps in a kettle would be too much I would think. Then left uncovered in fridge...

    Smoking with PID

Here’s a couple shot of my MES40 which is PID controlled and uses a mailbox setup which has a AMNPS cage with pellets.

    Beginning to hate my MES40

Switch to an East Oak. Much bigger chip tray and, in my opinion, better temperature control. The smoke last for a few hours before you have to add more chips. I've done multiple briskets (8-10 hour smoke) and they've all come out great. The only downside is they don't make a 40" model...

...house or an electric smoker you can generate heat without adding wood for smoke. In my case I run a rewired MES40 with a PID, Mailbox Mod + AMNPS tray. So in my setup I will be adding smoke via pellets in my AMNPS tray in my mailbox mod. Someone with a stock MES would add wood chips. Q...

Yes, get another independent temp gauge to confirm the temp. Sounds like too much smoke being created by the smoke generator. Might look into using a mailbox with a AMNPS instead of using the generator and a tube. People have a tendency to overfill the tube creating a lot of white smoke.

MES with Cold Smoker Attachment -- Am I doing it wrong? Ways to not smell like smoke?

Seems like a lot to do when you could've simply attached a mailbox or similar metal box directly to your MES and used a tray or tube. You'd use no more space than the cold smoker attachment,no moving parts or electricity involved and would get 10+ hours of smoke.

Proper temperature to smoke venison snack sticks

Do you have cure in the mix? If you do then get an amnps so you can burn sawdust or pellets and cold smoke them. Smoking at 180 you're risking fat out. Ryan

Inexpensive or Quality Pellets in Hopper When Using a Smoke Tube?

...I do run an electric smoker so I can speak to the act of separating heat generation and smoke generation because that is what I do with my AMNPS tray. I believe no matter what, if you are doing smoke generation with quality pellets like Lumberjack in your tube you are going to always win on...

    Smoking with PID

Yes the mailbox mod is a smoke generator but with no heat source. I typically use the AMNPS tray that is slightly elevated off the floor of the mailbox. The mailbox floor has maybe 9-12 1/4" holes in the bottom. The door of the mailbox has 4 holes. Yes a 4" hole in the back which the duct...

cold smoke attachment versus mailbox mod...

If i already own a cold smoke attachment why should I do the mailbox mod instead? Once the pellets start in cold smoke attachment, why cant you shut power off and let it go like Amnps.? I hate to add all that if I can do it with something I have...ty
