But are you still considering using the Masterbuilt cold smoker but with a longer exhaust vent tube? Per tallbm's replies, so much easier and most importantly cooler using a mailbox setup with a AMNPS tray.
Airflow for an AMNPS inside an MES can be iffy but in an mailbox mod you can tweak until you get it right. (Often this is the only option that will work with an MES30).
Also you never have to open the smoker to jack around with the pellets should there be a pellet flare up. If you have mailbox...

Switch to an East Oak. Much bigger chip tray and, in my opinion, better temperature control. The smoke last for a few hours before you have to add more chips. I've done multiple briskets (8-10 hour smoke) and they've all come out great. The only downside is they don't make a 40" model...

Yes, get another independent temp gauge to confirm the temp. Sounds like too much smoke being created by the smoke generator. Might look into using a mailbox with a AMNPS instead of using the generator and a tube. People have a tendency to overfill the tube creating a lot of white smoke.

Seems like a lot to do when you could've simply attached a mailbox or similar metal box directly to your MES and used a tray or tube. You'd use no more space than the cold smoker attachment,no moving parts or electricity involved and would get 10+ hours of smoke.
Do you have cure in the mix? If you do then get an amnps so you can burn sawdust or pellets and cold smoke them. Smoking at 180 you're risking fat out.

...I do run an electric smoker so I can speak to the act of separating heat generation and smoke generation because that is what I do with my AMNPS tray.
