I've smoked this way in the past with my GMG, keeping the door lid cracked with a block of wood, but it would go down to 170. This is when I miss my MES-40 and mailboxmod.

Unfortunately, cold smoking involves a bit more equipment, but you introduce smoke to the bacon with no heat. It imparts smoke but doesn't cook it. Look up mailbox mod on this site . Or cold smoke adapter. I use an old Bradley with a cold smoke adapter.

I will happily buy another pellet smoker once I get re-established. So good for overnight cooks. I also had a MES40 with a mailbox mod that I liked, but occasionally the AMPS would go out prematurely during the cook. Not a problem with a pellet smoker with a large hopper, and a remote thermometer.
I'm kinda bummed though. I just got a great cover for the MES last year. Heavy duty, easy on and off. When I put the mailbox mod on though I won't be able to use it.
Any ideas?
If you insist on using chips, you could purchase the Masterbuilt cold smoker attachment. I use one if I am not using pellets in a smoke tube in a mailbox type mod.
All I can say is click on the link at the top of my signature, I've been doing this for many years and then switched to doing the same thing in the mailbox mod a few years back. PID improves the entire experience 10 fold.
Like the other guys are saying, I believe you can remove your mailbox mod and be good to go. I feel like a good compact design might even allow you to just slide it under the legs there. If it sets on top of something it should be free of direct rain and any running water that goes under your...
Forgot to mention I also have an MES40 with an auber PID controller and the "mailbox mod" for a smoke tube. I use it almost exclusively for sausages, snack sticks, and jerky. Great set up for really low temp stuff
