This was my experience aswell. Using the same heating element for temperature control and smoke generation is a flaw in these tools. A mailboxmod or a Masterbuilt slow smoke attachment helps solve this problem.
Welcome to SMF from Indiana. I think you will find a consensus here from most of the MES users that either going with a pellet tray OR taking it further with a mailboxmod and the tray are the ways to go. The chip method has a number of drawbacks.
There are a couple of mods that can be done to the MES that can make it a much better cooker than it is out of the box.PID controller and mailboxmod are something to consider in the future.
Wish I had known up front to not try to smoke with the MES30 in 95 degree ambient temps.

Hickory is fine. Both my kiddos like their cheese smoked with hickory, and the mailboxmod should keep your smoke cleaner. See above post #11 for more suggestions, and good luck. Remember warmer outside temps will aid in a smokier profile on the cheese.

Foil disposable cake pan on the rails the water pan was on from the Dollar Tree. The heat will find it's way on all four sides. I usually use pellets or sawdust in the mailboxmod but this was a rare apple chunk in the chip tray.

Both issues are most often resolved by using an A-maze-n pellet tray (now owned and sold by Pitboss). While not entirely necessary, a mailboxmod makes it much easier to use the tray. You can do a search here for mailbox and find a bunch of how-to threads.
...P=7, I=600 and D=150 and the app smoker pic is this style smoker like a couple others. I believe Auber makes the PIDs for these style smokers so this is their default setting when you buy one of their PID. I hope someone has the time to do this and post for the Mes 30 and 40 with mailboxmod.
