    2nd round bacon question.

    Unfortunately, cold smoking involves a bit more equipment, but you introduce smoke to the bacon with no heat. It imparts smoke but doesn't cook it. Look up mailbox mod on this site . Or cold smoke adapter. I use an old Bradley with a cold smoke adapter. Corey

    I don't get the hate on Pellet Smokers.

    I will happily buy another pellet smoker once I get re-established. So good for overnight cooks. I also had a MES40 with a mailbox mod that I liked, but occasionally the AMPS would go out prematurely during the cook. Not a problem with a pellet smoker with a large hopper, and a remote thermometer.

    If you insist on using chips, you could purchase the Masterbuilt cold smoker attachment. I use one if I am not using pellets in a smoke tube in a mailbox type mod.

    Mine wont smoke unless set at 200, mailbox mod and maze works great and you get 8-10 hours of continuous smoke.

    All I can say is click on the link at the top of my signature, I've been doing this for many years and then switched to doing the same thing in the mailbox mod a few years back. PID improves the entire experience 10 fold.

    Forgot to mention I also have an MES40 with an auber PID controller and the "mailbox mod" for a smoke tube. I use it almost exclusively for sausages, snack sticks, and jerky. Great set up for really low temp stuff
