I've done everything from butter & cheese, to bacon and shoulder hams, to barbecue and grilling. Don't they make a 14" "Bullet" WSM? (like I need another smoker) 😄
Digging through some pictures looking for some content for the socials and I came across these shots of some beef short ribs on the kettle.
An these from the mini-WSM
Can't forget the money shot...
Greetings all.
I (re)discovered this place after @kilo charlie posted a link to his awesome Cherry Chipotle Lollipops on a different forum we both are on.
I love to cook with different cookers, and in the past even built my own small tandor oven just to make some tandori chicken, My main...
No idea.. the kettle kinda runs where it wants to. I cook more by sight, smell, and touch.
The Mini-WSM has a temp gauge on it, but even then I tend to let the run with the vents wide open, and maybe cut the top vent back to half closed if I need to. Most of the time I am not doing a pure...
I was in the mood for some actual meat ribs after the little celery rib experiment. I was able to find a decent package of beef short ribs at the store.
The ribs got a a generous dusting of rub and rested why the the smoker was brought up to temp.
Four short ribs are just about right not...
The Mini-WSM is a great little smoker, and just the right size for most of the cooking I do these days, But I do want build an offset or a even a stumps clone For some bigger cooks.
I used my COS a ton when I had it, biggest problem was there was only two of us, eating the BBQ that came off it...
Harry Soo, who has won everything you can win while cooking exclusively on WSM cookers, once entered a KCBS contest (brisket, pork butt, ribs, chicken, plus a side entry of dessert) using ONLY one 14" WSM, built up from a Smokey Jo and a tamale kettle, as described above. The KCBS contest meat...
As Keith said and sorry… my memory was just jogged from his post.
I built a miniWSM a while ago… Very fuel efficient and easy to maintain temps.
So, if the sale doesn’t work out… a 14”Weber, a tamale kettle and some hardware… you’d be in business.
That way I can butterfly them! Made a mixture of sautéed mushrooms, spinach, yellow onion and garlic. Butterflied the big breasts, spread some four Italian shredded cheese inside and then layered in the veggie mix. Folded over and wrapped with two slices of uncured bacon. Hung some mini bell...
Nice cook , and seems to be running well. Is it all you hoped it would be.
I have to get my WSMmini out so I can do a cook like this soon. Maybe on the weekend.

One of my all time favorites to cook on the smoker is Pork Butt. It is something I cook probably at least one every month or so.
My preference is for a bone in
The butt gets patted dry before getting a dusting of rub,
(Disclosure.. that is actaully my brand...)
Different butt, but you...
To be more precise... Boston butt bacon. This adventure innocently started in a random thread when I mentioned that competition BBQ cooks coveted a small muscle group in a pork butt, which they call bacon. Below, you can see that small muscle group, located in the fat cap on the outside face...
Welcome from Hawaii!
To start, and to not blow a hole in your wallet, another vote for a Weber Kettle. They're just so reliable, and have a nice and simple learning curve.
Another one would be a mini-WSM if you want an easy build project, though they ain't as cheap as they used to be...
Hi all! Long time lurker through the years, but decided to finally make a new home. Sad to see that some of the great men I used to see when I'd pop in are no longer here. Though I'm sure they're right there next to us whenever we smoke.
Dad taught me to grill on a Weber Kettle as a kid. Then I...
Couldn’t get an IMUSA pot but found a heavy duty Browne Thermalloy 32 qt. 4mm thick. Had my mini since 2010 and the pot has held up well. Added an ash remover like on the big webers and no plugging problems. Transports well disassembled. Two main racks with piggy back racks for 4 shelves. I’ve...
Hey Y'all,
I'm not sure if there's going to be an official gathering thread, so I thought id add a short blurb and photo dump since there's 8 pages to scroll through on the original announcement. Feel free to ad your pics here too
first of all I'd like to graciously thank all organizers and...
