I forgot to mention that the same slimy meat at those joints ate like chewing rubber so their implementation of velveting didn't make for tender food either.:emoji_disappointed:
If the chunks start out large enough to make it feasible I'd Jaccard them instead of velveting. I know Jaccarding works and if velveting does what I think it does I don't like it. I've eaten too much Asian food that's kinda slimey and I suspect velveting is the culprit.
Years ago, when the USPSA/IPSC nationals were held at PASA Park in IL, the lunches they served were grilled. Your choice of burgers or pork chop sandwiches. The burgers were good the the pork chops were outstanding.
Never yet met a Cajun Power product I didn't like.
There is also Keri's Hog Apple Baked Beans and Wampus' Baked Beans. Both get good reviews and are easy to find with a gurgle(or similar) search.

The next time this sad event happens someone posts again it the process...

Just as you don't know how the Camp Chef clean out works, I was unaware the Pit Boss pot is removable.
With the Camp Chef, you pull the release and then slide the bottom out of the pot. All the ash then falls out into the container I place under the pot. Also, maybe 20 seconds.
From my understanding Pit Boss burn pots do not dump and clean like Camp Chef's do.
Like R H B said, it is a game changer. Simply let it cool down and dump it every time. Nothing easier. I bought a new, empty metal paint can and dump into it and then put the lid on, just in case there are any...
