I have a stupid question. I know pork shoulder/butt is smoked 1.5 hours per pound. If I buy and 8 pound shoulder/butt, why couldn't I split in it half to cut down my smoke time?
All, thanks for looking. I'm smoking a small brisket tomorrow. First time for brisket. Any reason I cannot smoke for 4 hours tomorrow (Sunday) and finish cooking it wrapped in foil the next day (Monday)? I know it's not ideal but I won't have enough time to do it all on the same day...
