    Couple days late but been super busy. Got a rack of baby backs on friday and they turned out pretty dang good. Had my MES up to 275 (never tried that hot before).     Total time in smoker was 9.5 hrs. I wrapped in foil about the 7hr mark. Took it at when it hit 203IT and then put two old towels around it and into a cooler for an hour. I tried to pick it up to put into a bowl and it fell all apart! Taste good and nice shine and juicy flavour. My best PB to date.

    Woke up 15 minutes ago, MES is turned on and warmin up! Pulled pork is on the menu for this evening. Here is what im starting with! Rubbed up, wrapped in plastic 8 hrs ago and put in fridge.

    Im looking for pulled. I have never injected before. The other ones took about 7 hrs. I guess im just lookin for a better flavor profile after i pull them. I do use a dry rub, and usually put that on for an overnight soak.

    Could i maybe try a small aluminium pan to hold the juices in? Maybe some apple juice?

    I plan on smokin a shoulder this thursday. Lookin for ideas for a injection? Ive amoked three other shoulders but none have come out as juicy as i would like. I got a MES 30". Any tips would be great! Thanks
