For $50 you can get a pid controller that will control the temp better than anything masterbuilt sells.

My opinion is if you burn the anodizing off those elbows they will quickly rust out. The smoke from the mailbox is not hot enough to break down the zinc coating. I would just run it for a 12 hr seasoning run. The inside will then be coated with creosote and seal up the zinc. Then you are ready...
The mailbox mod is the best mod i have done to my mes. Well that pid temp. Control is pretty nice too.

This has completely changed my opinion of electric smokers. I was about ready to junk mine and go in a different direction.

Been trying to work up the courage to smoke a brisket for years. With this setup i might just give it a shot. Mesquite would be at the top of the list.
