I wiped all the extra oil out of the smoker and burned 3/4 bag of Kingsford briquettes and let it burn all night. It started out at about 400 deg and by the next morning had burned to ash. So, Saturday I put a rub on my St. Louis ribs and fired up the UDS. I think my first mistake was filling...
Started out as an infantry soldier with one year four months and 28 days in Vietnam. 1976 became a computer repair tech and did that until 1989 and became a corporate/charter pilot flying mostly Cheyenne's and King Airs. Lost my flying job when the bosses hunting buddy was looking for work so...
This is the set up I have. The 55 gal barrel has 3 inlets at the bottom with 3/4" nipples. One nipple has a 18" black pipe with a gas valve on it for adj airflow. The lid has four one inch holes that I am currently using flat magnets to cover. My basket is an 18" charcoal grate with 10" high...
I just built a UDS this past weekend and tried my first EVER smoke. I have pics but don't know how to post them. I had a 5 pound supermarket chicken and put it in brine over night and then smoked it yesterday at 275-300 for three hours. No rub. No Sauce. No wood. Just used Kingsford...
Welcome Doaner.
I am also new to the art of smoking. Just joined last month and look forward to my first ever smoke maybe Sunday. I live in Fort Wayne and we also have another smoker in town. Maybe we can all get together sometime and have coffee.

I made a UDS today for my first smoke ever. The price of bacon is what started me looking for a different way to keep bacon in the house. We set a limit of $4.00 lb for bacon in the grocery an as you can imagine we don't eat much bacon anymore. A local meat store will sell pork bellies for...
Hi Vickie. I'm new on this site and just getting started in smoking. My wife and I lived most of our school years in Franklin. I graduated FCHS in 1968 and she graduated in 1970. Good luck in your smoking and will look for your replies in the future.
Fort Wayne. Just picked up a new barrel yesterday at Indy Drum. My plan is to build a UDS in the next few weeks and try my first smoke ever. I have a rack of ribs from Lengerich Meats sitting in the freezer ready to go. Oh, by the way... how do I cut the top off this barrel?
