A warming oven is a must. Not just for holding Brisket but sides as well. It makes timing of everything much less stressful or even possible.

I want more capacity mainly and the issue I had with the Masterbuilt was having to add chips. The high end models have a bigger fire box and use chunks so you can just load it and walk away. I'm all about simplicity.
