As many of you knew, I was seriously over-smoking my ribs. I also was using all wood, no charcoal, and it was very hit or miss. But, with yall's help, I had quite a few happy eaters.
We had a cookout with about 15-20 people over...
I got a question about which wood to use for the charcoal fire...
2 Choices:
1. Royal Oaks Premium Charcoal Briquets
2. Cowboy Brand 100% All Natural Hardwood Lump Charcoal
Once I get that fire going - I'm going to sparingly add tin-foil wrapped chunks of Hickory.

Clearly we're not talking about regular old kingsford charcoal with all the carbon and chemicals.
I have never used Lump Charcoal - actual wood charcoal - before.

I figure I will let that beast blaze until I get them hot, then pour that into my side box into a nice pile. Then throw on my tin-foil wrapped chunks as needed?
