    Smoker as a grill... wife factor, etc...

    I replaced my gas girl with a Green Mountain smoker 4 years ago. They are easier to cook on than propane for sure. Your wife will love it. Just crank the heat up to 450 and do hotdogs and burgers. Or better yet ...cook them low and slow for better flavor.

    not bad for a little pellet smoker!  My big trailer pit gets alot more bark/crust on it...but its all good! Chris

    ...continued from earlier once the beef reaches 200 degrees its ready to be pulled off the pit.  I let it rest in the foil for 1 hour.  Slice against the grain and then dip the slices in the juice from the cook.  KEEP THE JUICE ALWAYS!!!  Enjoy and Happy New Year

    Brisket Process QView (steps 4-6)

    continued from earlier post.... Step 4-  Now that the brisket has the color I want I go ahead and put it in a pan. Step 5- I add about 2 cups of cola.  I used coke this time. Step 6- Foil it and continue to cook.

    Does anyone ever put there shoulder in a cooler and let sit for a while

    just remember that while hot in a cooler you are still "cooking" so depending on what your cooking plan accordingly.
