I started with 220-225 for about 1 1/2- 2 hours. I then increased the temp to 235-240 for the remainder. I pulled it out at 140 internal temp and wrapped it in foil and then two towels and let it sit for 30 min before plating.
Side dish is crispy pan fried polenta topped with onions and bacon which were sautéed in butter and seasoned with some crazy sweet seasoning I found in the pantry!!
