Out of curiosity, what did you use for a rub? I got a massive brisket from Costco myself that I plan on marinating tomorrow and still getting ideas on rubs.
I've been doing keto for a while and one of my goto foods as it's higher in fat and just plain tasty is ring bologna. I noticed it contained beef hearts as one of the ingredients which got me thinking of potentially incorporating more offal into the meat rotation, but the only type I've ever...
I may not have written properly as I was on my phone at the time. I have both prime and choice frozen (depending on how subpar the choice looks, i'll grab prime or if it's on sale :) ). With either, I can't seem to get consistent textures.
I'd probably prefer the bottom (getting that awesome...
Next time i buy more steaks, I'll give that a spin. I do vac pack them so that shouldn't be it, but i also vac pack pre seasoned with salt, pepper, garlic. I don't think that should matter, but you never know. I may have to do a Guga- style experiment. 4 vac pack frozen, 1 thawed via...
They came out fantastic. Even a huge thumbs up from the mrs. Im wondering if something happens to the steaks when freezing them that bothers her. How do you guys thaw steaks when frozen? Water bath? Fridge for a couple days?
This may sound a bit odd, but the Mrs has quite a sensitive texture palate. I got a Traeger last year and I think the results of cooking a steak are great. Just a hint of smoked flavor but the Mrs says she likes how they come out when on a propane grill versus the smoker. I personally can't...
Once you get it fixed I strongly recommend doing two things. First is to buy ethanol free gasoline for any lawn/snow power tools. Second is once you're done with whatever tool for it's season, to drain or run the tool's fuel out. it will help prevent the issue.
Has anyone used silicone bags for their sous vide? how do they compare versus ziploc or traditional vacuum bags? Are there any other alternatives to plastic bags?
i had the same problem where the probe just wasn't reading. i didn't go 6 hours, but went maybe 2.5-3 before checking on it and it was... less than ideal. not sure why probes decide to do that.
Started cooking at ~6AM 6/17/2020. Finally hit temp at 1:45AM 6/18/2020. Just shy of 20 hours! What an indoctrination for my first large smoke. After a "restful" 3.5 hours sleep, I can show you the results. Speaking of...
2:15AM, after a 30 minute rest. At first I thought the bone...
it's been 17 hours cooking. I decided to switch it to the oven and raised the heat to 275 to finish it off. I took it out of the smoker @ 165F and it's now 174F after being in the oven for 30ish minutes. I think the stall is over (or just the higher heat is helping :) )
I got mine from Lowe's. It was Oklahoma Joe's Gasket (the only gasket they had in stock).
I'm going to have to look into that needle mod. Trying to get this thing a steady temp has been a full time endeavor!
So far so good and even survived the first "burn-in" running it at max for 30+ minutes.
I've been fighting keeping the smoker at temp with fluctuations up to 258 and dips down to 205. Worse than a rollercoaster. The upside is the built-in thermostat seems to be pretty spot-on:
Here's...
Thanks for the welcome :) I'll grab a pick when I check on it and insert the tmperature probe in an hour or so.
BLASPHEMY! :emoji_laughing:
Also, forgot to mention, I'm from PA.
