Appreciate any help. Have a turkey that's been on 3.5 hrs at 275. Tried checking temp in breast and thigh. I readjusted probe in thigh because Was reading 165+ and didn't see how this could be accurate. Reprobed a cpl times and now for the past 40 min has read under 160 despite the other thigh...
Qview to come tomorrow. Grabbed a couple 9.5 lbers and a 7.8 lb bone in. Seasoned with some all purpose pork rub and brown sugar, wrapped and resting overnight.
....few beverages on ice for the smoking. A nice prelude to the inevitable light beer indulgence on Saturday.

I have done multiple single pork shoulders,
Ribs, etc in my MES 40 but planning on smoking for a group this weekend. I know it will fit, but is smoking approximately 35 lbs of pork shoulder ( estimating 3 @ 10-11lbs) affect the ultimate quality? Am guessing it will affect smoke...
