The cut should be fine. I have the same smoker, I season for a lot longer (usually several days) and when i cook I do not go over 235 for cook temp and I do not pull it until 195-200 internal temp. I think that would probably have you set.

Hey Everyone,
I am smoking two pork shoulders in a Masterbuilt Electric Smoker tomorrow to hopefully eat around 6-7. Question is what kind of cook time should I expect with that much meat, never done that much at once. I want to get the temp up to about 200-205 and I usually cook at 225-235...
